As an oil colorist you will need to work on oil primed surfaces and not universal primed surfaces. The reason being that universal primed surfaces are semi-absorbent. Gesso is absorbent despite the fact that it’s plate smooth. The paint does not get absorbed as much and sits at the surface more making it easy to blend and manipulate. Granted it isn’t highly absorbent but the fact remains that some oil will get into the primer and flatten the image. You’ll get around this by the use of an under-painting oil ground on top of the surface of a universal ground canvas but this is very time consuming and expensive.
